Jules' Gotu Kola Sambola Kale Salad

This recipe makes a lot of salad, but it is so delicious that it never lasts more than a day in the fridge! This fresh kale and tomato recipe is perfect when you have tons of kale and want to make the most of it. Mix the salad together before adding the dressing, and then mix again, flavouring to taste. For an extra crunch, add crispy fried onions on top. For a balanced lunch, add your favourite protein, like a boiled egg, chickpeas or chicken!
For the salad:
- 1 large bunch of kale, minced
- 4 shallots (or green onions), minced
- 1 pint cherry tomatoes, halved
- 1 chili pepper or jalapeño, minced (optional, if you like it spicy!)
- 1/2 cup unsweetened coconut, raw
- 1/2 cup unsweetened coconut, toasted
For the dressing:
- 3 tsp lime juice
- 2 tsp sugar (seriously, don't skip the sugar!)
- 1 tsp pepper
- 1 tsp chili flakes
- 1 tsp chili powder
