This fresh kale and tomato recipe is perfect when you have tons of kale and want to make the most of it. Mix the salad together before adding the dressing, and then mix again, flavouring to taste. For an extra crunch, add crispy fried onions on top. For a balanced lunch, add your favourite protein, like a boiled egg, chickpeas or chicken!
