Amanda's Simple Salsa

- 3 tomatoes, diced
- 1/2 white onion, diced
- A few springs of cilantro, finely chopped
- Juice from half a lime
- (Add 1/2 jalapeño finely chopped for a bit of zing)
Mix all ingredients together in a bowl. Season with salt, pepper and spices to taste.
Add to greens and garbanzo beans to make a fresh salad, or as a topping to your favourite protein: tofu, burgers, shrimp, fish or chicken.
